Colorful Eating

Summer is here and in full swing! The temperature has risen and people are wearing less clothing. The styles are free flowing and very colorful. Flip-flops, sandals, shorts, tank tops, and sun dresses are the attire for the season. Well, just like we change the way we look during the summer season, we can also change our eating habits. Besides, who wants to eat huge meals during this time of the year? I certainly do not. It is too hot!!!
There is a trend called “colorful eating” ( Eating In Color_Recipes and More ). This is a great way to ensure you are getting all of the nutrients you need in your meals every day. William Cowper coined a phrase : “Variety is the spice of life”. You certainly want to make sure you are getting a variety in your diet.

I thought I would share with you a few ideas in eating. These meals are healthy, very colorful, and  filling. 

Breakfast- I start my day with a bowl of Honeynut Cherrios with almond milk and a piece of fruit. I like the mini apples. I buy the Red Delicious, Fuji, and Gala apples and sample them all! There is a saying “ “An apple a day helps keep the doctor away”. Look at the benefits of eating an apple: 10 Reasons To Eat An Apple

I also drink a cup of coffee and a bottle of water.

Mid-Morning- I eat 7 raw almonds with a bottle of water. Almonds are great for reducing “bad” cholesterol. See the link below to learn more.

Lunch/Dinner-Usually eaten between 3 and 5 in the afternoon. I may fix a salad, sandwich, or  something light for dinner. The goal is to get fish  or salmon in my diet (2-3 times) a week. Here are some of my favorites:

Crab & Salmon Salad
Mixed greens, red cherry tomatoes
canned salmon, walnuts, sun dried cranberries,
crab (imitation-Ok), purple cabbage with a mixture
of Raspberry Walnut Vinaigrette &
Asian Sesame Dressings w/ Wheat Wafers.
Divine!
                                                       

This is a slight variation of Paula Deen's Salmon Croquettes
recipe. I added a tsp of cashew milk to the egg, used safflower oil,
with herb & garlic bread crumbs instead of what is indicated.
Add boiled corn cobbette and garden salad.
You will want to slap "yo mama"!

Chicken Salad
When you don't know what to do with
your left-over baked or rotisserie chicken,
add it to walnuts, cherry tomatoes,
sun dried cranberries on a bed of romaine lettuce and top
it off with a Chinese Chicken salad dressing.
Awesome!







Dessert-Treat yourself to a Pinkberry
Fruit Parfait. You will get the best of both
worlds-a dollop of your favorite yogurt
on top and bottom with your favorite fruit
and toppings blended in between! 
Yummy for the tummy!

Wow I love your cooking ideas!!! It is extremely important to eat healthy. Simply because if you eat healthy food you are most likely to look and feel healthy. If you continuously eat junk food you will most likely start looking and feeling like the food you are eating. To keep it simple eat a rainbow.

I had a great time reading your blog about eating healthy for the summer. Although i believe we should always try our best to maintain a healthy life style, atleast as best as we can. Because of my horrible eating habits for many years I have now developed high blood pressure and it isnt a nice thing to live with. This article shows I can still be healthy but I would need to take in smaller portions throughtout the entire day. Although you did mention having fish in a diet atleast 2-3 times a week is great, is one of my most difficult challenges because I am not a sea food person, although I do love chicken.

The recipes look delish minus the chicken and other animals (dead Animals). Any dish can be made just as good without having meat in it. I know everyone is different but thats just my opinion :) My motto is that if it had a heart beat or a mom or dad, I wont eat it.

I like your blog about eating healthy... I try my self to eat health when ever I can but I am always on the go. Where I work there is nothing healthy to eat. I sometimes try to take something healthy to eat but I don't have any success with that. I don't want to end up like my father and his brothers and sisters because they all have diabetes.

I have been terrible at being consistent with eating healthy. I will always attempt to go on diets but then, as always, I get side tracked. It's really frustrating to me. I love eating healthy, but I guess I love eating bad too. I do need to be consistent with eating healthy too as I grow older in age.

I start my day with a hot tea, then 1 egg with vegetables. During the day I have my 2 meals. In between meals, I have snacks (almonds, fruit, dates, vegetables) and water. I try something new every days, for breakfast.

I think anyone can discuss this topic on a daily basis. Your posts look very healthy which is aspiring me to do the same. Lately I've been neglecting my health but it's time for me to adopt a healthier diet. My post is a little outdated because it's not summer and people are not wearing the sandals and shorts anymore. I enjoyed this post:) I really like how you were saying that 7 almonds are helpful to eat in the morning, I heard that too as well as a cup full of mixed nuts. I also liked the end with the dessert! Frozen yogurt is a great dessert and a good idea it has healthy fruit plus its also sweet, very good substitute for ice cream!!:)

I also have a bigger breakfast, usually Greek yogurt with fresh organic strawberries and blueberries or blackberries, or whatever fruit I have. Along with coffee or tea and a English muffin. I do have a question for you; are you at all concerned with eating fish now? What with Fukushima nuclear radiation disaster,gulf BP spill, etc. ocean pollution levels found in Pacific ocean fish (particularly large species i.e. tuna, Maco shark, etc.) have been found to be high to very high at this time, I have given up eating these for the time being. I hope to one day feel they are safe enough to each again. Are you modifying your consumption of fish at all? Lisa Huggins

Thank you for he great tips for a dietary plan. The idea of coffee in the breakfast doesnt sound healthy, but as i understand moderate drinks of coffee is a ood idea. I do not enjoy eating fish but the chicken pita w/ grapes sounds delicious.

In this blog I have learned that eating healthy is not as hard as I thought. The recipes are easy to do which are not time consuming and I can encourage others to try to do the same. It sounds enticing, especially for this time of the year. It also sounds easy and practical. I will really try it because as you said, "Life happens", and sometimes we are physically exhausted which adds to our lack of resiliency. The more we've learned in class the importance of nutrition and sleep to cope with stress, the more I feel compelled to apply this knowledge; especially for those we love. You know, when I've been under stress and even when not, I usually just want a cup of coffee and don't eat anything until late. It was very enticing and the menu seemed simple enough to do. Now that I've gotten more education on how important it is to have a healthy body as "Life Happens", as you said, I realize the mistakes I've done in the past. Before my break-down five years ago, I hadn't been eating or sleeping for two weeks. No wonder! I am with you on small meals during the summer, who wants to feel all bloated on this heat. My favorites are a Caesar's salad with chicken and add walnuts for a real zeal. My second favorite in this heat is tuna on lettuce with vinaigrette and oil, it gives it a real punch.

I completely agree with this idea of eating healthy. I like Cherrios and I think that would be a great breakfast with some fruit... however... I feel that eating healthy should be an all year thing and not just focused during summer time.

I think its great to be aware of what you eat! I get a huge container of Costco brand almonds and carry a small zip lock bag of them with me everywhere. They're great for when I'm craving something salty or need a quick snack to keep me going.

Great meal ideas! Everything sounds delicious and easy to whip up. I am very lucky to have a little boy that would prefer greens and fruit to sugary sweets but I am still always looking for new ideas to try and get even more in. Also, I am a huge believer in portion control. I have never been big on dieting so that helps me keep my eating habits in check.

Your 1 day meal agenda is super healthy and looks very colorful. Colors feed the mind and soul. I love to eat healthy foods but just like any human i cry the fatty stuff sometimes. I love to eat nuts. i carry some with me always on a daily basis. i love yogurt. and i love salads. Specially in the summer my body temperature is usually very hot and to cool off i try to consume cool foods that wont make my temperature any worst. I will keep your recipes in mind. =)

Ive always started my day with a bowl of yogurt and granola, and I can definitely tell a difference in my mood if I don't eat breakfast. Although eating healthy can be sometimes repetitive and boring, seeing other options like Cheerios is exciting! That chicken pita sandwich also looks very yummy! ;)

I think it is great idea to change your diet and making your meals more colorful I find that you do get more nutrients in. I found this blog very interesting, the recipes looked very delicious. One of my favorite foods are chicken pitas with the side of peaches or whatever fruit I have that day at home. My favorite things to snack on is pistachios and there suppose to be good in moderation.

One thing I do is I try to have salmon at least once a week but I think your goal of 2-3 times a week seems like a better goal, I will try to do that as well. I also use to try to eat an apple a day, but for some reason I stopped. I think I just got bored of it. I will try to get back on eating apples again. Thanks for the post. This helped me to remind myself how important it is to eat healthy. :)

A few years ago, I changed my lifestyle on how I eat. I love eating healthy, and the title colorful eating is perfect for this blog post. My son has allergies so we had to revamp the way we eat. It was for the best. My family has never been this health. We have tons of energy, and I dont even miss the sugar that I was consuming.

I start my day with some exercise on Monday, Wednesday, and Friday at 5 am, then when I am done I my first meal is a hot tea wih alovera and a protein shake. This helps me start my day with energy and gives me a little of recovery from my workout. Then throughout the course of the day I eat some small snacks like: granola bars, fruits, or a salad to fill me up. I make sure that I drink a lot of water, right now I am at 5 water bottles trying to increase to 8 waterbottles a day. The thing I struggle with is when I am so busy I start eating a lot of junk food that I know I need to stop, It is a struggle for me. But I try my best to stay healthy and be active everyday, at least walk from school to my house everytime I can.

I try well not my hardest to eat healthy. I enjoy Heart Healthy Chicken Noodle Soup with half a sandwich (turkey is my fav). It is tough eating healthy for me because I wake up mid afternoon so breakfast has past and so has lunch.. with a empty stomach. A bad choose I make is going out to eat. Which I know is really bad but I hate making food! But your dishes look so amazingly delish! I think I might steal them :) which its hard to even carry a meal bc im always on the go and no car and just a purse on me. so its challenging.

d carltock I enjoy eating colorful foods ,green and yellow peppers are like eating candy .I love drinking pomegranate juice but it is cost is high!! I blend one head if lattice, a apple one bottle of water some frozen fruit ,some fresh ginger ,fresh garlic .It keeps me from feeling hunger most of the day!!

I used to not like healthy foods because my impression was it either didn't fill me up or it didn't taste good but based on recent research including this one and I worked in a Mediterranean restaurant where health foods presented well had were more tasty and appealing like Pavlov's theory of classical conditioning or operant instrumental conditioning where behavior was increased based on visual effects and past experience or consequence were there to increase desire.

This is a great article eating healthy is a great way to feel good every day and great way to start your morning . i began to eat healthy sure did change the way my body would feel had lots of energy and was losong weight great feeling but it became difficult working grave yard shift was much difficult but i try to eat healthy foods when ver possible i met a guy that would eat healthy every day and count calories he would dedicate more time to his health than his family i couldnt do this. I would rathe reat good and know i ate something before if i were to die even the healthies person will die someday i just rather know i ate a good meal .

I strongly agreed that colorful eating habits are always the great way to provide vitamins and minerals enough for our body. Indeed, a variety kind of yellow or orange colored vegetables helps us reduce the risk of developing cancer as carrots, yam, or corn. Moreover, the green colored vegetables, the wonderful source of calcium, help our bond stronger and keep our vision sharper. The blue or purple fruits help us maintain flexible blood vessels as blueberries and blackberries as well as the red colored foods protect us against cancer and heart disease as potato or watermelon. Therefore, colorful eating is the healthy nutrients needed in our daily meals.

This is a very good advise in healthy eating and I really want to try one of those above. I appreciate your comment at the end about some people using food to fill a void in their lives. I have been guilty of this and have tried to fill loneliness or sadness with food... but I realized that over-eating or indulging in comfort foods only made me feel worse! Eat clean and feel clean!

Thank you for this beautiful post. I also strongly believe in the connection between health and nutrition. People PROUDLY come to work Mondays boasting about the fact that they spent the whole weekend doing nothing but eating JUNK food and netflix. Junk, as in no value, worthless, junk!!!

I recently watched an amazing, well made documentary called "What the Health." We have all been conditioned to think a certain way about food and the entire food industry. The movie is a great eye opener and people can switch to a more plant based diet for optimal health, vitality and longevity.

I have actually started been very into eating healthy, and I noticed in how better I feel throughout the day. I try and make sure I have a veggie with lunch and dinner, which is pretty easy for me given I love veggies. for breakfast I like egg whites on a English muffin, I'm not really big on meat but I'm really big on fish. I love everything you have prepared for your meals on this day, with the exception of the can food I really try to stay away from can foods.

Hello there!

During these times of stress and end of term assignments and papers, it is important to keep our bodies healthy! Not only should we be taking Emergen-C and vitamins, but we should also be aware of the foods we put into our body. I know that with work, endless assignments, and shorter days it is easier just just stroll by the drive through and pick up something fast than to go home and cook a whole meal. Recently I have started to substitute my breakfast for a green smoothie juice. I add green apples, pineapple, kale, cilantro, ginger, spinach, and celery. I will have this for a quick on the go breakfast (while sitting in 405 traffic) and it has been helpful! I do not feel hungry until about 11 AM and I am getting those veggies and fruits that are difficult to get during this chilly season. I will definitely strive to be more mindful of what I eat!

This is a cool and delicious (actually "yummylicious") post! Dr. D, I break my fast with a heavy breakfast; turkey bacon, eggs and an awesome cup of coffee. Mid morning, I eat raw almonds (I like almonds soaked in a cup of water overnight which makes them more yummy), orange juice or cuties, date palm fruits, and a multivitamin. This will pump me up with energy! I have a big box of walnuts also, I don't eat them as often as almonds though. Walnuts act like natural aspirin and protect the heart. Also, I put turmeric (an Indian spice with anti-carcinogenic properties) in the fried eggs in the morning. I drink a cup of water with freshly squeezed lemon on empty stomach before breakfast. This feels like sunshine! :))

I somehow never had an appetite for honey nut cherrios, but after seeing your post, my taste buds are craving for it and I made a grocery list of honey nut cherrios, apples and almond milk (I love food!). I thought red apples are not sweet, even though they say it as "red delicious." I always buy the not so red apples, which happen to be sweet. But, I am going to try the red fuji apples now. I don't know, somehow I haven't been a great fan of apples. Being a doctor, I am a worst patient and I hate going to the hospital as a patient to see my doctor and yet I avoid apples (may be it's time I start eating apples to keep my doctor away ;)

I really liked your recipe on salmon and how to use the left over chicken and make a delicious salad.

I love the idea of colorful eating. I definitely try to live by this. In the mornings, I love looking down at my plate of rainbows, which usually contains red bell peppers, baby tomatoes, avocado, kalamata olives, cucumbers, and egg with green onions, and a little bowl of blue berries on the side. I love snack foods, so I normally take cut up veggies and fruits with me to work, instead of a full meal. I'm happy to be in California now where the produce is amazing year round. I also like the idea of eating with the seasons.

I think that the concept of colorful eating is great but, it could be hard if you don’t have a choice in what you eat or if your not financially able to buy these foods. I also think that it could be hard being a teenager, but if you don’t have a choice and your able to colorfully eat then i say that everyone should try too. if you are an athlete then colorful eating isn’t as hard cause typically you try and eat as healthy as you can. I feel like i do colorfully eat but i do also eat something’s i shouldn’t.Playing a sport really helps me to stay on task for colorfully eating and trying to get rid of eating a lot of junk foods.

This article overall has been an eye opener. Surely colorful eating serves a better advantage towards our health. It was a change to see how one cup of coffee was mentioned for breakfast when many think of it as bad for our health. In my opinion, colorful eating might be hard for people to achieve. For starters any greens or "good meat" like crab and salmon can be really expensive. Overall, colorful eating is helpful as it get all our needed nutrients for us to consume. So what if we spend a few more bucks, anything is better from visiting the doctor's office.

Eating good food for your body is so hard to accomplish nowadays with all the fast food around us. When reading this article it reminded me how imperative it is for us to eat healthily. Breakfast is probably the most important meal that I always skip. In order to make a change, I need to get a healthy breakfast so I won't starve my mind and physical body throughout the day.
Its funny you mentioned a salmon croquettes recipe because my grandmother used to make them for me all the time. I now find myself making them every now and then for dinner too. Such a great way to incorporate fish into your diet.

Growing up, my mother always incorporated different colors into my daily meals. When she began teaching me how to cook for myself, she stressed two things: 1. NEVER have the heat on too high. 2. Always use vegetables and fruits that vary in color. As a child, I always thought that was just my mother's eccentricity showing. In reality, she was teaching me how to properly fuel my body and my growing brain. Since the brain uses glucose for fuel different fruits and vegetables incorporated in a balanced diet is more than enough to fuel both. Unfortunately, the average American diet consists mostly of meat. So many are not meeting their daily vitamin and mineral intake. Then they wonder why they are so sick all the time.

i think this article is helpful for people that find it hard to eat during the summer. i mean it is a struggle to eat and cook and find something good to eat without going towards to fast food. this is a good source and menu. I would love to try some of these recipes. I am currently on a reduced carb diet and I limit my fruit intake but i do eat a lot of nuts, meats, and tons of veggies.
I don't eat fast food and I pack my meals daily. I try to incorporate many colorful foods into my diet. Since i struggle with obesity in my family eating healthy is very important to me.

I try to keep a colorful plate for the whole family all year round to benefit from all ingredients and to ingest as many nutrients as possible from the meals and snacks. I can totally relate with not wanting to eat so much when it’s summer due to the high temperatures! On a side note ever since I took health class in 9th grade I can’t live a day without fruit and vegetables because my body starts to crave it and feel out of it if I don’t, thanks to my teacher for educating us very well to always eat the rainbow. For a while now, I have been trying my best to make healthier food choices and form healthier eating habits, especially since I am in the process of growing as a teenager. I usually find myself snacking a lot throughout the day, but it’s typically something like cookies, a granola bar, or whatever I can find. However, I will definitely try switching these out for healthier options like almonds, as you mentioned, or fruits, like apples or oranges. I’ve also started to incorporate appropriate servings of grains, proteins, vegetables, and fats into my diet in order to eat well-balanced meals. Everything in the article seemed delicious, even though I m the type of person who will not eat all day until dinner time. These food acatllt looks like something you would get at a restaurant, especially the desert. There is so much information on how to make delicious food with leftover that's amazing I think. there are so many ways to be creating, some people are creative with food, or by clothes, etc . There is another way to make what you eat become delicious if you do the color wheel. the one where there is a color at the other side of the color you like, for example; red goes well with green. so you would find some kind of food that is green. red beans and green salad, red tomatoes green beans with steak or whatever your mind come up.

Colorful eating is extremely beneficial as it tricks the mind and when put in front of it we want to chow down on it as the color makes it a whole lot better. When I started adding color to my food whether it was as simple as adding some greens and tomatoes, or some corn and red bell peppers I noticed that I ate healthier or wanted to eat it as the I was amused on how the color popped. Colorful eating is very important in a world of fast food and impulse food purchases that are not healthy for you due to being impatient. When you eat colorfully, you begin to want to have a variety of foods that are not light brown (bread), dark brown (greasy meat), and yellow (processed cheese). When you introduce color into your food pallet, what happens is that your body is getting nutrients that would enrich your body with vitamins and fuels to continue for the next day. However, when you online supply your body with foods that are not colorful, you become sluggish, sleepy, and frustrated. That's why I appreciated the way this post offers ideas for healthy meals. And for me personally, the post seems to make "colorful eating" more fun. Eating balanced meals doesn't have to be boring and a chore, nor does it have to take hours to prepare. I think you are very right. I, for instance had terrible eating habits. I never ate veggies, sometimes fruit and mostly junk. Growing up in a hispanic household we were never taught the concept of healthy eating. It was always eat what mom make because it is delicious. We never questioned, well what is in it? Does it include veggies? I'm sure most of the time some type of vegetable was included but I really doubt it in a healthy way. Now that I am older I feel the effects of eating junk. Now I know where the saying "you are what you eat" comes from. I feel like what I eat now. Ruiz

I love the concept of "colorful eating", as it refers to eating healthier all while creating a fun and intriguing point of view. Not many enjoy eating healthy and this really gives off that eating healthy is great.

Yessss Dr. D! It's ALL about colorful eating. My mother grew up on a farm and her mother raised/grew/made everything they ate so I grew up with very "rustic" and healthy eating habits compared to most Americans. I love all fruits and veggies and for as long as I can remember they have always been a big component of my meals and food intake. As I got older I learned that so many people don't consume such well rounded diets and the term "steak and potatoes" is a very popular diet for most Americans. So many of us are not consuming enough "good" foods and I love how colorful eating makes it so easy and fun for anyone to follow a healthy diet and lifestyle. Thank you for this wonderful and very important information.

Simply put, eating the rainbow involves eating fruits and vegetables of different colors every day. Plants contain different pigments, or phytonutrients, which give them their color. Different-colored plants are linked to higher levels of specific nutrients and health benefits.

Eating healthy has been associated with boring green leafy vegetables but now,with more knowledge and evolution in health and wellness people realized the importance of eating variety of healthy food in one salad. I always think of salad as leaf and dressing now I’m excited whenever I make my salad because I dii on by just out mixed greens I also put nuts and some
Fruits and some legumes and it makes the salad more interesting delicious and way healthier. So a knowledge of colorful eating will make you level up your salad recipes .

Most people don't realize that colorful eating is the easiest form of dieting. It not only gets you excited to look at your food, but the variety of naturally colored foods is beneficial to your health.

Having more colorful foods such as vibrant fruits and vegetables is by far the easiest thing we can do to help out or natural gut bacteria and maintain a healthy intake of vitamins and nutrients. Often times fast food looks bland and lifeless when compared to the same food that could've been made at home. It's not just about having colorful foods it's about having foods that aren't nutrient barren and generally unhealthy.

Eating the "right" foods get you going throughout the day. It is important to know what you are putting inside your body especially the older we become. I try to keep a balanced diet such a low carbs and more greens. I also like eating acai bowls which has a lot of fiber similarly to the Pinkberry fruit parfait.
